Gluten Free/ Dairy Free Recipes

This page will serve as a recipe box for gluten free / dairy free recipes that I have tried. Trying to find gluten free / dairy free recipes has proven difficult for me, so I would like to help those that may be on the same diet as our family, or just anyone looking for a yummy dish. Once I charge up the camera I will be sure to include pictures with each recipe. Enjoy!




Gluten Free Meatloaf & Dairy Free Mashed potatoes
Meatloaf2 lbs ground beef2 eggsSeasonings of your choice ( I used Garlic Pepper)1 teaspoon balsamic vinaigrette1/2 cup crushed up Gluten Free Rice Chex cereal


This is a simple meatloaf recipe I've made recently. I put the rice chex in a ziploc bag and crushed them up as fine as I could. Mix all ingredients together to form your meatloaf. If you enjoy a tomato taste in your meatloaf you can include Gluten Free ketchup, or I put in fresh cherry tomatoes in the mix and on top of the meatloaf as well. For even more natural ingredients you can make your own diced tomatoes and juice by cutting up a tomato and boiling in a small amount of water for about 5-7 minutes. You can include this in your mix, or on top of your meatloaf.


The meatloaf in total only takes about 1-1.5 hour in baking time. 


Dairy Free/ Gluten free mashed potatoes


10 medium sized potatoes peeled and cut up into cubes1/2 cup Almond milk2 to 4 teaspoons olive oil butter ( I used Olivio brand butter )Salt to taste


Boil your potatoes in water until they are soft, but not super soft, able to be pierced nicely with a fork. Drain potatoes and place back into your pot. Include the almond milk, and butter. You can whip up with a whisk, however I prefer an electric mixer as it makes the potatoes less lumpy. When finished I added in salt to taste (everyone's preference is different so include what you like).


As an additional side I included green beans which are also gluten free, but you can add any of your favorite veggies too!






Gluten Free / Dairy Free Fruit snacks


All kids and even adults love fruit snacks, but they are loaded with sugar and un-natural ingredients. So here is a quick recipe that is healthy and yummy.

1 cup mixed berries ( I used strawberries, and blackberries)1 cup hot water1/2 cup apple sauce ( I used homemade apple sauce-see recipe below, but you can use the no sugar added kind as it's lower in carbs).1/2 cup fruit juice (Used juicy juice apple juice)2 packets gelatin mixture (You can use the gelatin with no flavor if you'd like, however I used sugar free strawberry banana for extra fruit flavor). 1 cup cold water (2 ice cubes)


Place your berries and 1 cup hot water in a pot, boil until your berries are soft and able to be mashed (about 10 mins time). You can then place berries in a food processor, or blender, however I have neither, so I mashed by hand with a potato masher :). Place in apple sauce, fruit juice, and bring to a boil (only about 3 mins time).  Sprinkle in your packets of gelatin and make sure it fully dissolves. Pour into a glass baking dish ( I used 9 x13 to make the fruit snacks thinner) Add in 1 cup of cold water ( I also included 2 ice cubes to ensure it was cold enough) stir and let set for about 4 to 5 hours. After it is fully set you can cut into squares, or use small cookie cutters for shape!

Carb count for the entire 9x 13 dish is only 57 grams of carbs, so depending on how you cut your pieces will determine your carb count.




Homemade Apple Sauce- Gluten Free

4-5 large apples (about 7 medium ones) I used red delicious1/4 cup Stevia (or whichever artificial sweetener you prefer)2 teaspoons cinnamon1 1/2 cup water


Peel and cut your apples into cubes, place in a pot with water, and bring to a boil until apples are soft and tender (about 15 minutes). Mash up apples further into smaller pieces. Add in cinnamon and sweetener and stir completely. Bring to a boil once more (about 3-4 minutes) and remove from heat. Cool off or eat warm whichever you prefer!


Carb count for the entire dish is about 104 grams. Be sure to measure out accordingly for your total carbs.




Mango Salsa


1 Mango, peeled, pitted, and diced up. 1/2 medium onion chopped up fine1 jalapeno pepper1 small cucumber, diced3 tsp fresh cilantro3 tsp fresh lime juicesalt & pepper to taste


Combine all ingredients in a bowl and season to your taste with salt and pepper.
